Just life. 2020 & Marvelous Mushrooms / 1-8-2020

      Folks, I have to say I don't a lot to say right now, I am in the middle of an extremely long week with work and trying to get some financial things taken care of that are getting frustrating with folks who have information just not reading what is in front of them. My son, bless his heart is actually helping me to put things into perspective, as he and his wife returned from a New Year vacation in France, they got back to their home, but their luggage did not. So as he said, frustrating yes, but what is getting all worked up about it going to do. Just, one step at a time, and work to resolve the issues to clear the way for putting myself in a better situation. I don't want to be house rich and pocket poor. But when overruns happen, and the weeks turn into months, not on flamboyant items, but necessity, it happens, and anyone here on the Cape who has done a semi-major remodels knows this. Cape housing useless a new build is going to have issues. We live on a sand pile surrounded by water, what do we think or expect. So things are going to happen, and when your house is literally one of the last to be built in the sub-division, well, you get it. The only thing I can say is if I ever do sell the next owner is going to have one heck of a sturdy, safe and updated house, I love it when even the inspectors are impressed with the work of my contractors. So with all that, I am looking forward to a quieter weekend, ok after I work a 1/2 day and the warmer weather, and just getting out I hope to enjoy this great and wonderful place, old Cape Cod that we call home, even if there are a few shower around. Keep smiling and keep looking up for all your answers to life and living, and just be careful not to step in the dog poop at the edge of the road and your front yard. Remember it takes a lot of fertilizer for a green spring. Talk to you later. 
      This week's small business report comes from my visit to the Pop-up market at Cape Cod Beer this past Saturday, Since many of you I know did not make it, I know many of you would like and especially since they are a local business. The first place is called Stefania's Spark Sugar Scrubs. You can find her on facebook under StefaniasSpark and look all around. Oh did I mention the owner is a 12 year old young lady, with a little bit of Moms help, but it is her business. If you are a person who loves sugars scrubs this is the place, at this time I think I counted 15 scents she has available. So check her out, and watch for where she will be and go support a local young entrepreneur. 
      Next up is another local designer Snowflake Designs found on facebook at SnowflakeDesigns02562. If you are a camper, know a camper, always wanted to be a camper but didn't know how to get started (you can start here), these are the folks for you. They have signs, onesies, bibs, mugs, they have campin' signs, Mom plaques, Dad/Man Cave signs, and the list goes on. these are small, not overpriced and would make a great gift or something just funny yet cool to hang in a place that needs a little brighting up. So check them out, they also keep their events page updated so you know where to find them. 
      Good grubs this week, I have to say I did not make it out of the house, to any local establishment. I have been working from 6:30am till some nights well after 7pm. So I have been feasting out of my own grub hub, call the refrigerator. So my apologies for nothing new, you know my favorites by now, Red Nun, Grumpy's, Keltic Kitchen, Ninety-Nine, Jasons Tavern, Scargo Cafe. One place that also you can find at the Cape Cod Beer Pop-up is the Underground Bakery, their main location is right off Rt 6A in Dennis behind the post office, in the basement. They are open for breakfast on or 6 am - 5 pm. except Sunday and only 6-Noon. Coffee, baked goods, sandwiches, Soups, stew, chowders and chilies. They are more of a get and go, but they do have a few tables to site and munch a bunch and have a conversation with someone, with some great coffee or tea. So check em all out. 
      So I hope you all made it through the new year happenings without much trouble, I guess that the fact you are here with me could mean one of two things, you struck out really bad so you want to hang with someone that make you feel so much better about yourself or you have so much time on your hands you just don't know what else to do but keep an eye on the old man. So what do we have to talk about this round, the waters are quiet, the weather is not much to write home about (mind you I am not complaining one bit on this one, sure the temperature swings are a dit ridiculous with near 60 degree notes expected this weekend. But no major snow events, no major Nor'Easters, no frozen Bays or Sounds, a few high winds and some rain here and there, but that is it. Hey, we are about 1/4 of the way through January, I love it, Cape Cod winters like the old days, and I even thing I saw a few golfers out the other day when I was driving by one of our local courses. I will say I saw a few owl the other day around dusk so I am not sure exactly what kind they were.We also have a pair of Hoot or Barred Owls around. In the evenings we can go up in the tower and go out on the cat walk and listen them talk back and forth with each other. We have also seen quite a fair share of Coyotes as well. It seems that the rabbit population has increased this last year and thus, as the seals are to the sharks so are rabbits to coyotes, a built in eco-buffet of goodness. And as they say it is the survival of the fittest. Speaking of sharks, I think it is safe to go in the waters now, as most of them have taken off south of the New England boarders for warmer waters. So if any of your are those winter type surfers and kite surfers come on out, although the waves have not been the absolute greatest. Rather tame out there so not a lot of big surf happening right now. As we all know we had our last weekend of lights and festivities and what a time. We ended up with an outstanding year, more than I actually thought. At the beginning of December with it being such a short season I wondered how it would go. But we were about 7-8 percent up from the year before so that is good. Tells me there is still room to grow and people are still willing to come and help. We will all take a break from any festivities for a while and East is not till April 12 so it is nether early or late and we will have something around that time and I am sure there will be early sunrise services up and down the beaches. So keep that in mind going forward. Our facilities are not open right now for the winter months other than to scheduled tour appointments and for the school kids. But as always the grounds are open with the observation deck being wide open this time of year. The paths and trails are still open and there is still a lot of wild life o be seen. And you can still catch a freighter ship or two passing the Cape heading both north and south.So there are still things to see and do, even though the station and tower are not open. I thing we are shooting for around mid-April to first of May to open up on the weekends, then go full open Memorial Day weekends. Well this is about it for this second report in January, Hope you were not too board and pray you stay well and healthy. Get our there and enjoy what we have with nature or wherever you are at. And until we meet again have a great and wonderful especially if you can do it right here on old Cape Cod. 
      Well hi-de-ho and a shake-n-bake New Year's to you and yours. I hope you did not miss last weeks start with fun with cocktail week. If you did you will have to go back and check it out, but a little tip, In going back don't Rum over it, or you will miss it. Ha, Ha. Anyway, oh with week two of the month and the side dish week. This year we are going to try to stay with in season, seasonal vegetable dishes, looking for something that is in season around the month I am posting in. Now we do have a few things that will come into place twice in a year, but I will do most only once as not to repeat myself. We have enough recipes and veggies to go around the whole 52 weeks without repeating. The hardest of seasons though is this very first, winter, but I have found what they consider in season and we will start with those wonderful things we call fungus amongus, of the incredible edible delicious mushrooms. Can you tell I am one who loves shrooms? If they are edible, I will try them, use them in all kinds of things and find new ways to use old standards. My thing with mushroom recipes is, unless it is calling for a very specific kind of mushroom, experiment with different kinds. Try them in different recipes and just go for it, each has a different flavor and texture so if you don't like one try another, especially you texture freaks. (I mean that in all love, you know who you are.) Now a couple things to remember, do not, let me repeat that DO NOT run fresh mushrooms or any kind under water, they are like sponges and soak up water and can get rubbery. Now if a recipe is calling to put them in broth, thats cool cause it will take on the flavor of some of the broth you are soaking in. Dried mushrooms are a who different ball game with water, read, instructions or hits on what you need to do to rehydrate and use. They are particularly great in soups, stews and chowders, so don't be afraid of them and you don't need to go nuts in buying large amounts at a time. When fresh, use a mushroom brush or a paper towel and brush off any dirt that may be them, look at the stems and trim off the dried part. Depending on what kind you are using and what recipe, if you "pop" the stems out or not, or if you will scrap the gills out, some it is better to do that and others if you are just sautéing that does not matter. So just read, read, read your recipe instructions to see what they suggest first. So with all that, let's get this ball rolling and go for it, as my mouth is already watering, as I sit here eating my marinated mushrooms, yum. 
      
      This week's recipe: Marvelous Mushrooms
     
      1      pd        fresh mushrooms (free to be creative here)
   1/3      cup      soft butter
      1      Tbls     parsley, minced
      1      Tbls     onion, minced
      1      Tbls     Dijon mustard
      1      tsp       salt
      1      pinch   cayenne
      1      pinch   nutmeg
1 1/2      Tbls     flour
      1      cup      heavy cream

      Clean mushrooms, (do not wash under water) and cut in half or quarters depending how large they are and put in a 1-qt casserole baking dish, and set aside. Cream together butter, parsley, onion, mustard, salt, cayenne, nutmeg, and flour. Pour mixture over mushrooms in the baking casserole dish. Dot with butter and pour on heavy cream. Bake uncovered in a 375 degree pre-heated oven for 1 hour. Stir gently once or twice during baking. 

      Remember all recipes are "discovered" through church potluck cookbooks, social group spiral bound cookbooks, and other stew pot type cookbooks. all are at least 20 if not 30 or more years old. If I ever take from an actual book I will give specific credit, but I have not done that for years. Or if is truly one of my own creations I will make specific note that the recipe is my own creation. Just don't want anyone thinking I am not giving credit where credit is due. Most of those old recipes that grandma wrote down came from a newspaper someplace or the bake of a box. So I am just make the blanket statement and let it go from there. Hope that clears up any questions where I get my recipes from. Happy cooking.

Over the river and through the woods to warmer weather we will go. Hum, there are some days it is much easier to think warm fuzzy thoughts than others. I think even my ball of sun that I enjoy watching come up over the house across the street from me is frozen this morning. But here we are Wednesday, Yes Hump-day, the midway point of the week. So at least time has not frozen and we are moving. Some days are just a little more challenging to get moving on, but again, all I need to do is look at those in the hospitals, in nursing homes, those in houses along the way who are in a hospice program, knowing there are missions and shelters packed with homeless who have nowhere to go, and no family who wants them. Look around you, so it is cold, the wind is blowing and the wind chill is not even fit for a fox to be out in this morning. As much as we would like to “complain” about our conditions, we really do have it much better than a lot of others. So as you bundle up and shiver and shake, remember to be thankful for really all that you do have and be of good cheer, spring is not that far away. Have a great day, stay warm, and really do think warm fuzzy thoughts, it does help, and remember if one comes on another in true need, stop and lend a hand, and to the rest, huddle for a few to generate more heat. And may you have a very Happy, happy all day long through any and all situations.

Flame Tuesday Morning EveryOne,
Rise and shine and I sure hope you dressed warmly or it cause it’s chilly out there. It is a wonderful morning to be a polar bear, But this fine feathered morning even my Rhododendron bush outside my window the leaves are rolled up tighter than a fine Cuban Cigar. I enjoy sitting inside my office watching the morning parade of dog owners taking their pouches for a walk and seeing all the outfights that the dogs are wearing, and noticing the dogs that are just fine with this temperature change and those that are not. I will say though this morning even the birds seem to still be nestled down in there cribs waiting for some sign or glimpse of a ray of sunshine to bring it’s warmth. But not yet just a beautiful light pale blue sky to start lighting the day. May your day be filled with warmth, if not from the outside, definitely the inside, and may you find some joy in sharing an encouraging moment with a friend. May the work we do today keep us warm and toasty and may we remember all those who have to work out in this stuff. Remember if you come on one in true need, lend a hand and to the rest a hearty welcome. And may you have a most happy, happy all day and may find warmth in your heart wherever you go.

White Monday Morning EveryOne,
Well the first Monday of the first month of a new year, can you believe it, are we happy, happy, happy? With blue skies and a crisp temp outside my window, oh how I can enjoy being indoors enjoying to view and not having to be outside to do my job this morning. Sometimes it takes just a little different perspective to appreciate being up in the morning. Or just the ability to be up, and dress yourself, to be able to get a cup of coffee or tea, or to,,, you fill in the blank. As we start this new year, may we look around us and not always look for the half empty of things but the whatever the amount the glass if filled. And let’s do all we do with gusto and effervescently so that others will catch a ray of sunshine and be encouraged as well. Remember, if you come on one in true need, lend a hand, and to all the rest that cross your pat today give a hearty smile. And may you have a most happy, happy all day long.

And a find Friday morning to you, I hope that this short week has not found you lost or overwhelmed. It has been a whirlwind of a week with New Years Day stuck right in the middle. Year end deadline and new year changes and challenges thrown in our faces. But we are who we are and we will make it happen. So find that happy face, grab hold of the reins and let's ride this toboggan all the way to the end of the run. Ok so not many of us have a lot of snow but you get the point. Now, we have got to do what we need to do and make the most of everything that comes our way, regardless of what the weather brings, or those around us try to do to derail us. Life is what we make it, and sometimes we have to add a lot of sugar to the lemons we have been given. So pull on those boots and and lace them up good and let's get this day going. Oh and the theme of the week has been food items considered to bring good luck in the new year. As we go through the day be open to if you come on anyone in need to stop and lend a hand in whatever way you can. Now let's go make us a most Happy, Happy not just for today but all weekend long.

Well here we are the first letter of the new year, the last of the week. Aren't you happy to be awake and wide eyed and bushy tailed. Well, look at the alternatives? So I will take being awake over my alternatives. I hope you had a wonderful New Year and as this week will conclude in just 2 days we need to finishing strong and doing all we need and can to make this a great way to start 2020. The days are already getting longer so that should be a plus. So let's get that footwear pulled on and laced up and let's get this day on the go and make the most of every minute we are given. Happy New Year 2020 & a Coco-Mocha Alexander Cocktail / 1-1-2020

      Happy New Year all, time for a new start to a new year, and a new decade. Have you made any resolutions? I have, only one though, I have resolved not to make any new years resolutions past this one, cause most are ended, broken, or forgot but the third week if not the third day in January. So what are some things I would like to see happen, first starters, learn to relax more. Stop working so much overtime if and when possible (problem is that kitchen of mine, although it is beautiful it was no cheap, and there are bills to be paid. so that is most likely not going to happen. Unless someone, somewhere, has pity on me and hires me at twice my present salary. I would like to loose a few more pounds, and be able to bake a bit more in my new kitchen. Yes, I am a guy who likes to cook, and bake, hate to clean up, but I am not a messy baker, I keep stuff cleaned as I go along cause I do not want to deal with a mess afterwards. Love making Cheesecakes, Bundt Cakes and pies. But we will see. I also need to get back to putting paint on canvases and finding someplace to show them. After the kitchen I don't have much money left for show fees, so looking for someplace that does not want an arm and a leg in commission fees to show my paintings. Anyway, this summer I would I want to get back to the beach, which I have not been to in the past few years due to back issues and I really want to go kayaking. Maybe somewhere along the way I can get some of this done. But most of all I just want to be able to enjoy being here on Cape Cod. It is so beautiful that I want to be able to take in this wonderful place that I love so much and the reason I now live here. Even with a bum back and a few other battered body issues. But it is what it is. I also want to be able to live life without so many aches and pains, but I think that one is a loosing battle so let's stay on the positive and what we know will be reality. So much for a good laugh. So this year what are you hoping will go better than the past? Is the Cape in your bucket list? Are you here like I am and just need to get out and enjoy it more? Then to all of us may we have a much healthier and active life than we have in the past, and may we all get out more to get to know this place we call old Cape Cod a whole lot better. Have a great and and wonderful every day especially if here on Cape Cod. 
      Local & small business report. Well I met the these folks at the Cape Cod Beer pop-up market on a Saturday before Christmas. Some cool things, and not just Holiday stuff. Check out their web site at https://capecodwhalecompany.com/. They do have ornaments, but also wall hangings, desk and table decorations, and they can do signs as well. These would make unique gifts for anytime or something to spruce up the cottage or home. Check em out for something different. 
      Speaking of Cape Cod Beer Pop-up market, they will resume this coming Saturday January 4th and then every Saturday through April 25th from 11am - 4pm. There will be local crafters, food vendor, local bakers, and musicians. And if your going some Saturday morning why don't you call in advance and take a guided tour. It is a ticked event and the spots are limited, and happen Saturday mornings at 11am. So check that out while you're doing the market. https://capecodbeer.com/. 
      Last up for this round is Holly's Deli, now located at 882 Main St, West Dennis across from the Dennis Fire Department and next to the Ezra Baker School or catty corner to Mermaids as well as on facebook. Folks, if you want a sandwich that will fill you and then some without busting your wallet, check out Holly's Deli. If you want a wicked good sandwich for lunch or dinner, check out Holly's Deli. If you are looking for someone to cater your office lunch, your social gatherings meeting food needs, your tail gate party needs, get over to Holly's Deli. They have it got you cover. Am I saying this loud and clear enough, if you aint been to Holly's Deli, your missing some great food. So get your tail in gear and get over to Holly's Deli and you will not be disappointed. 
      Hello, hello, and a Happy Happy New Year to you all. I hope that last night is not leaving you feel like muddy toad with no place to hop to, while holding an ice bag to your temples. See this is one of the pluses to becoming an old curmudgeon, we go to be early and wake up when we fill like it, and best part of it, is we don't end up with hangovers and we will have 50 cents in our pocket. LOL, Ok so we are boring as watching clam races, but seriously, we did stay up long enough to ring in the New Year, and climb the tower stairs and watch fireworks off in the distance southward to Chatham.  Provincetown was a little easier on us as they did them Sunday early evening, and yes we took the climb and watched those also. As the New Year is now upon us, remember that the grounds ornaments and decorations will be up through this weekend. So come on out one last time before they go back into storage for another year. The weather has been relatively quiet, the seas quiet, the winds, not unreasonable, and temperatures that have been fairly mild. But I am not complaining one bit as it makes for the school children's visits much more enjoyable. We are still taking reservations for tours, so don't think we are all filled up. We would love to host your tour group, or social club. Well, as it has been a long evening, last night, we watched that big parade they do every year out there in the west this morning, and lots of football games. We are just plum tuckered out. So you have yourself a great one and whenever possible come and have a great and wonderful with all us right here on old Cape Cod.       
      Welcome to the beginning of a brand new year and another great year of cocktails. This year I am going a different direction, instead of a "name" theme, I am going with a spirit theme. This year I am looking at all kinds of Rum adult beverages, cocktails, consumable liquored liquid, firewater, you know the good stuff. Ok, ok, so that makes it look like I am the area booze brother, when in reality I'm not. I enjoy studying mixology, and the making of spirits of all kinds. However, when it comes right down to it, I don't have the money to waste on a lot of liquor. I have a small amount and I enjoy experimenting and trying new things from time to time. And looking for recipes to cocktails is one way I find things to try on those occasions I do choose to consume. Only on a very special nice out will I order something out, as I just don't like taking the chance of drinking and diving, even if it is just one. So in this year, if you choose to consume, be a responsible consumer, be a responsible host and be a responsible friend as friends don't let friends drink and drive. I know for the most part I am talking to adults and we all should "know" better, but you would be surprised. So sorry for the commercial here, but better a word now then a word only wished would have been said. Remember, All my recipes are retrieved from other sights, books, and clippings. Unless I can state for a fact who, or where the drink originated from, just know it was not from me and please google for more info. Now let's get this year started with some real fun, seriously, tried this one and it is wicked tasty, now on with the show:  

      This week's recipe:  Coco-Mocha Alexander Cocktail
      
      3/4       oz      spiced rum
      1/2        oz      coffee brandy
          1       oz      cold black coffee
          1       oz      coconut cream
          1       oz      cream

      Pour all ingredients into a blender with one cup of crushed ice. Blend until smooth. Pour into a wine glass, and serve.
      Garnish with a few chocolate covered coffee beans on the side.
